From Hams to Heritage: Explore the Essence of Bayonne at the Ham Fair

The Bayonne Ham Fair, also known as the “Foire au jambon de Bayonne” in French, is an annual event held in Bayonne, a city in the Basque region of France. It celebrates Bayonne ham, a cured delicacy renowned for its rich flavor and exceptional quality. Originating in 1426, this event is a testament to the enduring love affair the Basque Country has with pork, representing a cherished tradition deeply ingrained in the region’s cultural heritage.

When and Where

The 561st edition of the Ham Fair will take place from April 4 to 7, 2024. The fair is divided into two distinct zones: the artisans of Bayonne Ham gather under the big top on the Roland-Barthes esplanade, while the gourmet fair is hosted on the square of the halls.

A Little Backstory

Bayonne Ham’s legacy is steeped in centuries-old tradition, perpetuated with the utmost respect for heritage. Legend has it that in the 14th century, Gaston Phœbus played a pivotal role in its creation, inspired by a wild boar that fell into the salt waters of Salies-de-Béarn. Since then, Bayonne ham has delighted renowned palates, from poets like Piron to literary giants like Rabelais and even the King of France, Henry IV.

Event Overview

The fair typically unfolds in the spring, attracting both locals and tourists eager to indulge in the festivities and savor the delectable ham. Throughout the event, visitors can enjoy a variety of activities including tastings, cooking demonstrations, cultural performances, and ham-cutting competitions.

From the curing process to the intricate techniques employed by local farmers and pork butchers, attendees gain insight into the meticulous craftsmanship that defines this renowned delicacy.

Cultural Celebration: Beyond the culinary delights, the fair is a vibrant celebration of Basque culture. Attendees are treated to lively music, dance performances, and cultural demonstrations, adding to the festive atmosphere and providing a rich tapestry of Basque traditions.

As an emblem of local craftsmanship and cultural heritage, the Ham Fair is a defining aspect of Bayonne’s identity and traditions. Beyond its economic significance, it serves as a cultural beacon, preserving the authenticity of a medieval tradition that has endured for over 555 years.
